@littleowl So it’s an easy prep but can easily go wrong. Heads up the dough can easily become too dry or too wet. Dough: 250 g peanut butter (made from 100-120g PB Powder+water) 120g brown sugar substitute 1 large egg 60g vanilla protein powder (the type will impact the structure) [5g Ginger paste* 1 teaspoon Cinnamon* 0.5 teaspoon Nutmeg* - * variable to taste] Add while mixing :[15-30g Coconut Flour (added slowly to build structure, stop when the mixture is doughy/wet doughy depending on Protein Powder)] Pinch salt 100g Dark Chocolate (Save half to press into the cookies) On the tray: Shape into exact cookie shapes (They will not spread) Bake (Fan Oven): 180C for 12-20 mins (I do 15 then check). Rest for 10 mins.

@nene.pablo this was made with whey. I’ve made them with Vegan protein in the past (a mixed blend) with the vegan protein the dough will be dryer than wet, so usually have to use slightly less coconut flour and more water. Balling in hand and pressing the dough onto the baking sheet/tray (rather than shaping wet dough onto the tray like I did with these). Hope that made sense πŸ˜…
