Sharing a stunning Japanese pickled daikon recipe today - bright, crunchy, and packed with umami! 🌼 Thinly slice daikon, mix with 3% salt, massage, and press under a weight for 1–2 hours. Brine (1L): 450ml water, 350ml vinegar, 250ml veg dashi, 100g sugar, 40g salt, calendula petals.
