For god tier mashed potatoes: when you strain the boiled potatoes, add a raw egg and mash it in quickly, the heat will cook it. Then add your regular butter BUT also a teaspoon of mustard. (source: am Irish, trust me)

for perfect jammy eggs there isn’t a magic amount of time to boil because the size changes cook time….but you have to give them a warm bath before adding to boiling water and straight into an ice bath when you take them out
